I am working on my project, drained my energy, and starving. What is better then "un-cooking" something fast, and savoring it!
I decided to prepare a soup and a salad, both Raw!
I had my computer with the recipe in front, and a skype call with one of my best friend from another continent, how lovely! Only that I wish I can share my "un-cooking" meals wirelessly to taste!
What you need for the Soup is:
4 cups mushrooms (any kind)
2 cup soaked cashews**, (or soft young coconut meat)
2 cups water ( I used hot water)
1 tomato
1 tsp. sea salt
2 Tbsp. flax seed oil
1 garlic clove
1 pinch cayenne pepper
2 Tbsp. nama shoyu, or tamari sauce
4 green onions, chopped ( I didn't add these)
Equipment:
Blender or a Vitamix
Blend all ingredients except for green onions. Place into bowls. Decorate with chopped onion.
** Only soaked them for 30 min - the min should be 4 hours
