My second recipe for today is the Thai Coconut Soup.
I just had it, and it was super delicious, you'd better try it... I have saved some for tomorrow.. I will just add a salad with it.
Raw Organic Ingredients:
Greens:
Veggies:
1/2 avocado
1 medium garlic clove
Fruits:
1 cup tomatoes

cups young coconut meat
Water:

cups coconut water

1/2 cups water
(I used hot water)
Spices:

inch fresh ginger
2 pinches cayenne
pepper, or
to taste
Other ingredients:

Tbsp. mellow miso (optional)

Tbsp. garlic-flavored flax seed oil, or olive oil
Last two ingredients
1 cup tomatoes,
diced
1/3
cup onions, chopped
Equipment:
Vita-Mix or a good blender
Blend all ingredients except for the last two and the cilantro or parsley .

Then add the cilantro or parsley,
and blend briefly, so it is not entirely liquefied. Pour into a bowl. Add the
last two ingredients and mix well. Add more cayenne pepper if you desire the
soup to be spicier.
